Italian hot chocolate


Ingredients:

2 glasses milk

2 cinnamon sticks

3 tablespoons sugar

2 tablespoons chocolate powder (or more, according to personal taste)

2 yolks

2 tablespoons cognac

Preparation method:

In a large pot, boil the milk and the cinnamon sticks. Separately, whisk the yolks and sugar to a smooth cream. Set aside. When you see it boiling, add chocolate powder dissolved in the cup of the cream that was set aside before. Keep stirring constantly. Let it boil again. Remove from heat and add the yolk cream, mix, return it to the heat once more and let it boil, stirring constantly. Remove from heat and stir until it eases. Repeat the operation 3 times, so that the yolks are cooked enough. Slowly, some foam will rise.

Optional: once ready, add 2 tablespoons of cognac.

The hot chocolate shouldn’t be too watery, nor too dense as a fondue. It is supposed to be a full-bodied cream.
